Borscht, It’s all about the beets!

Most of my soups are packed with nutrients, and good for you ingredients that the body loves and this recipe definitely delivers. Beets have B vitamins, magnesium, vitamin c, and folate. They can help to improve circulation and heart health. 

Ingredients:

  • 4 beets

  • 2 carrots

  • 1 clove garlic

  • 3 potatoes

  • 1 onion 

  • 1  6 oz can tomato paste

  • 6 cups vegetable broth

  • 1 Tbsp apple cider vinegar
  • salt and pepper to taste, add fresh dill at the end 

Instructions:

  1. In a heavy stock pot heat 1 tbsp olive oil add onion, and garli and cook until translucent
  2. Add beets, carrots and broth
  3. Bring to a boil with the cover on, then reduce to simmer for about 15 mintues
  4. add potatoes, paste, apple cider vinegar, dill, salt and pepper. 30 minutes or until the soup becomes slightly thicker and reduces
  5. Using an immersion blender, blend until smooth, top with fresh sour cream or dairy alternative and fresh dill. * this can be served cold or warm!
