Mushroom barley vegetable soup

Ingredients:

  • 1.5 cups barley uncooked
  • 3 carrots sliced
  • 3 ribs celery chopped
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 2 pint packages of baby bella mushrooms
  • 8 cups vegetable broth, if not vegetarian use beef broth
  • 2 bay leaves
    1 tsp thyme
    1/4 tsp sage
    salt and pepper to taste

Instructions: 

  1. Heat 2 tsp olive oil in pot
  2. add onions, carrots, celery and cook several minutes until softened
  3. add garlic cook 2-3 minutes
  4. add barley, broth, and spices, bring to boil, then reduce to simmer
  5. add mushroom and cook until barley is cooked through and tender, approx 30 minutes

makes 6-8 servings
