quick dinner idea
  • Ingredients
  • 1.5 cups small baby potatoes cut in half
  • 1 package of vegan italian sausage( I love the brand field roast)
  • 2 leeks, washed, use white parts only, cut into rounds
  • 1 fennel bulb, thinly sliced
  • 2 medium carrots peeled and chopped 
  • 2 ribs celery chopped
  • 1 cup halved green beans
  • 4 cloves garlic minced small
  • 1 can 28 oz diced tomatoes
  • 1 can white beans drained and rinsed
  • 6 cups vege broth
  • 2 cups chopped collard greens or spinach
  • 1/2 teaspoon of each: parsely, oregano, thyme, basil
  • salt and pepper to taste
  • squeeze of fresh lemon

Instructions: 

I know there are a good number of ingredients, but this really is a comforting meal in a bowl and easy to assemble and  let  simmer on the stove.

  1. Heat 2 TBSP olive or avocado oil  
  2. Add leeks, carrots, celery, fennel, and the spices and saute for several minutes until tender.
  3.  Add garlic, and sausage, saute 1-2 minutes, add tomatoes, navy beans, green beans, broth 
  4. Cover and simmer 20 minutes or until veggies are tender.
  5. Once veggies are tender, add greens and lemon and simmer 1 more minute. add salt and pepper to taste.
