- Ingredients
- 1.5 cups small baby potatoes cut in half
- 1 package of vegan italian sausage( I love the brand field roast)
- 2 leeks, washed, use white parts only, cut into rounds
- 1 fennel bulb, thinly sliced
- 2 medium carrots peeled and chopped
- 2 ribs celery chopped
- 1 cup halved green beans
- 4 cloves garlic minced small
- 1 can 28 oz diced tomatoes
- 1 can white beans drained and rinsed
- 6 cups vege broth
- 2 cups chopped collard greens or spinach
- 1/2 teaspoon of each: parsely, oregano, thyme, basil
- salt and pepper to taste
- squeeze of fresh lemon
Instructions:
I know there are a good number of ingredients, but this really is a comforting meal in a bowl and easy to assemble and let simmer on the stove.
- Heat 2 TBSP olive or avocado oil
- Add leeks, carrots, celery, fennel, and the spices and saute for several minutes until tender.
- Add garlic, and sausage, saute 1-2 minutes, add tomatoes, navy beans, green beans, broth
- Cover and simmer 20 minutes or until veggies are tender.
- Once veggies are tender, add greens and lemon and simmer 1 more minute. add salt and pepper to taste.
