Carrot Cake Energy Bites
A Healthy Treat That’s Delicious to Eat –
When you are looking for a treat, but one that gives you energy, rather than food coma or guilt, these Carrot Cake Energy Bites are a perfect snack!
Ingredients:
- 12 medjool dates soaked in warm water for several minutes to soften
- 1 cup oats
- 1/2 cup walnuts
- 1/2 cup grated carrots
- 1 TBSP chia seeds
- 1/4 cup raisins
- 1/2 tsp cinnamon
- 1/2 tsp ginger
- 1 tsp vanilla
- 1/2 cup shredded coconut for rolling
Instructions:
1. Removes dates from water and save 1-2 tbsp of water
2. In a food processor, blend all ingredients except coconut. Blend until a dough like consistency.You can add up to 1 TBSP of water if it looks dry.
3. Remove from food processor and roll into small balls, then roll into shredded coconut. Let the balls set up in the refrigerator and enjoy!
