Carrot Ginger Immune Soup
Support your system with a boost –
This soup is full of all vitamins, nutrients, and immune boosting spices. Carrots are full of beta carotene, vitamin C, vitamin A, calcium, just to name a few. Turmeric is a great anti-inflammatory, garlic has compounds that can help decrease the severity of colds and flu, and ginger which also has anti-inflammatory properties as well as compounds that can help ease cold symptoms.
Ingredients:
4 large carrots chopped
3 cloves garlic
1/2 onion chopped
3 cups vegetable broth (you can also use bone broth for added protein and nutrients)
1 8 oz can lite coconut milk
1 TBSP ground ginger
1 TBSP turmeric
salt and pepper to taste
cilantro to garnish or stir in prior to serving
Instructions:
- Using a pressure cooker, throw all ingredients in except coconut milk
- Cook for 35 minutes
- Remove from pressure cooker & stir in coconut milk
- Blend with an immersion blender or you can use a blender until smooth
- Garnish with cilantro and a little fresh lime at the end right before serving
