A Healthy Breakfast that’s Delicious to Eat –

When you are looking for a traditional pancake alternative this Swedish version is a great substitute. It is similar to a crepe, and can be filled with savory or sweet toppings. 

Ingredients:

  •  6 eggs
  • 1 1/2 cup almond flour
  • 2 1/2 cup milk or milk alternative (I used almond milk)
  • 2 TBSP monkfruit ( can use stevia as well )
  • 4 TBSP melted butter (I used a vegan version)
  • 2 TBSP vanilla
  • toppings: strawberries, blueberries, raspberries

Paleo Swedish Pancakes

Instructions:
1. In a bowl, mix all ingredients together until smooth.

2. Heat a thin layer of butter or oil spray in a skillet or crepe pan over medium heat. 

3. Pour batter so that it evenly covers the bottom of the skillet, I gently rotated the pan to ensure an even layer

4. cook for several minutes until it starts to lightly brown and bubble. Flip over to finish cooking.

5. Transfer to a plate and roll, serve with your favorite topping.

Paleo Swedish Pancakes

Support your system with a boost –

This soup is full of all vitamins, nutrients, and immune boosting spices. Carrots are full of beta carotene, vitamin C, vitamin A, calcium, just to name a few. Turmeric is a great anti-inflammatory, garlic has compounds that can help decrease the severity of colds and flu, and ginger which also has anti-inflammatory properties as well as compounds that can help ease cold symptoms.

Ingredients:

  • 4 large carrots chopped

  • 3 cloves garlic

  • 1/2 onion chopped

  • 3 cups vegetable broth (you can also use bone broth for added protein and nutrients)

  • 1 8 oz can lite coconut milk

  • 1 TBSP ground ginger

  • 1 TBSP turmeric

  • salt and pepper to taste

  • cilantro to garnish or stir in prior to serving

Instructions:

  1. Using a pressure cooker, throw all ingredients in except coconut milk
  2. Cook for 35 minutes
  3. Remove from pressure cooker & stir in coconut milk
  4. Blend with an immersion blender or you can use a blender until smooth
  5. Garnish with cilantro and a little fresh lime at the end right before serving
