Buffalo Cauliflower Mac and “cheese”

Buffalo Cauliflower Mac and “cheese”
1 box pasta, your choice I used a grain free rotini
1 head of cauliflower chopped into florets
2 cloves garlic minced
1/2 large onion minced
3/4 cup franks hot sauce
1-2 TBSP olive oil
panko or gluten free bread crumbs

Sauce:
1 cup cashews that have been soaked in water for several hours or overnight
1.5 TBSP nutritional yeast
1 tsp smoked paprika
salt/pepper
2 cups water

Directions:
1. cook pasta per package instructions, put aside in large bowl. Preheat oven to 425 degrees F
2. toss cauliflower florets in olive oil and sprinkle with 1/2 tsp smoked paprika, salt, pepper. bake 20 minutes, take out and toss with 1/2 cup of franks hot sauce, put back in oven 5-10 more minutes
3.Make Sauce: everyone in the sauce ingredients into the blender, add remaining franks hot sauce and smoked paprika, blend till smooth. Add salt and pepper to taste.
4. toss pasta,cauliflower, and sauce together and transfer to baking dish. Top with bread crumbs and broil on lo for 1-2 minutes,just until the top is brown… ENJOY!
