White bean chocolate chip cookies

I am always looking for a healthier snack option for my sweet tooth and these cookies definitely do the trick. NO eggs, or gluten. The main ingredient is actually white beans. The original recipe from www.hellospoonful.com called for chick peas and chickpea flour, I swapped out the chickpeas for white beans and the chickpea flour for almond flour, they took a little bit longer to bake through than  if using chickpeas, so I adjusted the time below.   I also added a few more chocolate morsels…The best part about these cookies is everything goes in the blender..one bowl and done.

Ingredients:

  • 1 15 ox can white beans
  • 1/2 cup peanut butter
  • 3 TBSP coconut sugar or monkfruit
  • 2 TBSP maple syrup
  • 2 TBSP coconut oil
  • 2 tsp vanilla
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/2 tsp pink himalayan salt
  • 3/4 cup  dark chocolate chips (can use a vegan option to make the recipe fully vegan

Instructions:

  1. preheat the oven to 350 degrees, and line a baking tray with parchment.
  2. place all ingredients except chocolate chips in t a blender and blend until smooth.
  3. Let batter cool for 1-2 minutes, then add chocolate chips.
  4. scoop onto baking sheet with spoon or scoop. bake for 20-25 minutes or until the edges are slightly browned and the cookies are a little firm.
