Ingredients:
- 1.5 cups barley uncooked
- 3 carrots sliced
- 3 ribs celery chopped
- 1 small onion chopped
- 2 cloves garlic minced
- 2 pint packages of baby bella mushrooms
- 8 cups vegetable broth, if not vegetarian use beef broth
- 2 bay leaves
1 tsp thyme
1/4 tsp sage
salt and pepper to taste
Instructions:
- Heat 2 tsp olive oil in pot
- add onions, carrots, celery and cook several minutes until softened
- add garlic cook 2-3 minutes
- add barley, broth, and spices, bring to boil, then reduce to simmer
- add mushroom and cook until barley is cooked through and tender, approx 30 minutes
makes 6-8 servings
